Carol R. Roubinek

On November 23, 2024, Carol Roubinek, age 87, passed away peacefully with her family by her side.

 Carol was born August 21, 1937, and lived her entire life in Nebraska. She was blessed with one brother and four sisters. Carol married Donald (Don) Roubinek in June 1955 and they enjoyed 69 wonderful years together. They had four children: three daughters, a son, as well as a much-loved daughter-in-law, and her sons-in-law who always kept her laughing. She was a beloved grandmother to 12 grandchildren and 18 great-grandchildren.

 Carol was a stay-at-home mom for many years, volunteering at school as a room mother and being the best mother she could be to her four children. As her children grew, Carol went to work for Northwestern Bell Telephone Company.

 Carol enjoyed traveling with Don, particularly on cruise ships. Some of her favorite trips were when she visited her daughter Linda in Germany and accompanied Don to the Czech Republic to see his father's childhood home. Carol enjoyed going for walks, playing bridge, and especially playing golf. She made the best caramel popcorn each Christmas. She was also renowned for preparing scores of twice-baked potatoes for Christmas dinner and baking numerous pies every Thanksgiving.

 Carol loved spending time with her family at the lakeside resort on South Turtle Lake, Minnesota. The annual vacation with her parents, siblings, and extended family was anticipated all year. She cherished this time at the lake so much that upon retirement Carol and Don purchased a vacation home on South Turtle Lake. Family gatherings at the lake were Carol's favorite pastime.

 Carol's spirit of kindness and love of life will live on in all who knew her.
